During the holidays, my mother always made sausage cheese balls as a finger food. I used to eat them by the handful! (Still do, honestly.) Most recipes call for Bisquick, which has the same number of carbs as this recipe, but I wanted to try it with almond flour since I didn’t have Bisquick handy. I found this recipe at the Beautiful Diabetic and tweaked it a bit.
These sausage cheese balls are delicious!
1 pound breakfast sausage
10 ounces of Mexican blend cheese, grated
1¼ cups almond flour
¼ baking powder
Preheat your oven to 375°.
Put your cheese and sausage into a mixing bowl. Knead by hand.
Add the remaining ingredients and knead it in. Mix very well.
Roll into balls about 1½” in diameter and place onto cookie sheet.
Bake for about 20 minutes.
Let cool and move them to a storage container. They should last a few days — if you can keep your hands off them!
